Banana Cake

Just a quick stop to share this great banana cake recipe. Stay home, stay safe!

Ingredients:

  • 4 ripe bananas
  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ teaspoon pumpkin pie spice mix
  • 1 large egg
  • 1 cup whole milk
  • 1/4 cup oil (canola)
  • 1 teaspoon vanilla extract

Preheat the oven to 350˚F. Mash the bananas with a fork, set aside.  Grease and flour an 8-inch round cake pan, set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the flour, sugar, baking soda, salt and pumpkin spice mix. Mix well. In a separate bowl combine the egg, milk, oil and vanilla extract. Whisk until well combined. With the mixer running on low speed, add the liquid ingredients to the dry ingredients in 3 parts. Once you are done, increase the speed to medium high and mix well for 15 seconds. Lower the speed and add the mashed bananas. Mix well for 10 seconds more. Pour the batter into the prepared pan and bake for 45 to 50 minutes or until cake tester comes out clean.

Note: The batter will be very wet, that’s ok, I promise. Also, if you don’t have pumpkin pie mix, just add 1 teaspoon of cinnamon, ½ teaspoon ginger powder, ½ teaspoon ground all spice and ¼ teaspoon ground cloves. Sprinkle with powdered sugar to serve.
