I love this recipe, the brownies come out just the way I like it: Fudgy, chocolaty, moist and crusty. I don’t think I will change this recipe. Ever. Why would I? They are just perfect. I tested this recipe a few times until I got the perfect consistency and baking time I was happy with. Not only did I make this recipe a few times but it got the approval of a bunch of kids and that, my friend, is the ultimate test.
These brownies are a great base if you like to add things like nuts, coconut or chocolate chips which I experimented with as well but I’m a plain-brownies-type of gal so I keep it simple. Another great addition is salt. Yes, salt. Salted brownies are great, just sprinkle it at the end of baking time with flaky sea salt and that will enhance the chocolate taste even more. Ingredients:
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
6oz 70 or 72% dark chocolate, chopped
6oz butter, cut in pieces
3 large eggs
1/2 cup light brown sugar
1/2 cup white granulate sugar
1 teaspoon vanilla extract
Preheat oven to 350˚F. Line an 8-inch square baking pan with parchment paper, butter parchment paper. Set aside. In a bowl, mix together the flour, salt, baking powder and set aside. Melt the chocolate and butter in a double boiler and set aside to cool a little bit. In the mean time, whisk the eggs both sugars and vanilla until well combined and smooth. Little by little, add the melted chocolate, whisking constantly to avoid the eggs to scramble. Once all the chocolate is incorporated, add the flour and mix well until fully incorporated, just don't over mix it! After the flour is in, this will be the time to add anything you like, nuts, chocolate chips etc... If not, pour the batter into the prepared pan and bake for 25 minutes. It's important that you don't over bake them otherwise they will dry out so set your timer! A cake taster will not come out clean but it shouldn't come out super wet either. Let it cool completely before you cut it. Enjoy with fresh strawberries or/and whipped cream.
