Heirloom Tomato Salad with Za'atar and Feta Cheese


The other day I was going trough the salad recipes I've posted and I realized that I haven't posted a single tomato salad. How could this be? I don't know how I made it this far without posting one. I'm in love with tomatoes when they are in season, they are just simply the best thing. Don't you agree? 


I was at the Farmers' Market earlier this week and I bumped into these gorgeous heirloom tomatoes. I was happy to see the season starting. I immediately grabbed a few for lunch and I gathered some more ingredients and in no time, we were eating a fresh and absolutely delicious salad. The tomatoes were sweet, juicy and meaty, exactly how I love them. This recipe is simple, I sprinkled the tomatoes with za'atar (a Middle Eastern blend of herbs, sumac and sesame seeds) then a drizzle of good olive oil and I also added pistachios which gave it a nice texture. Spring on a plate.


This salad would go perfect with your BBQ, if you are having one this weekend, or simply have it for lunch or dinner. How do you enjoy tomatoes during Summer? 

Ingredients:

- 3 medium heirloom tomato
- 3oz Feta cheese
- 1/3 cup pistachios
- za'atar
- salt and black pepper
- olive oil
- micro greens, baby arugula
or whatever greens you like

Slice the tomatoes (a little thick) put the slices on a serving plater. Sprinkle it with za'atar, crumble the cheese on top of each slice. Arrange the micro greens on top and then the pistachios. Drizzle with olive oil and season with salt and pepper to taste.
