Spring is here, wooo hoooo!!! That makes me really happy. Spring is my favorite season, I'm sure I mentioned that before.
I couple of months ago I got an ice cream maker as a gift (my very first one) from my awesome cousin Raquel and I was just waiting for the right moment to use it.
I've been busy this week with a couple of projects but I had to make time to share with you this AMAZING recipe: Strawberry-Orange sorbet. It is so refreshing. I know, it's only Spring not Summer, but I couldn't wait until then to post it.

Ingredients:
4 cups strawberries, hulled and sliced
1 cup water
1 cup fresh orange juice plus the zest
1/2 cup sugar
In a saucepan, place the sugar, orange juice and water and bring it to a boil. Let it boil until sugar dissolves, about 3 minutes. Add the strawberries and the orange zest and let the mixture boil for 8 to 10 minutes. Using a hand blender (regular blender works just fine just do it in small badges) Puree the mixture and then pass the it through a fine mesh strainer. Let it come to room temperature and place in the refrigerator to chill. Pour the mixture into an ice cream maker and freeze according to manufacturer's instructions.
What kind of ice cream maker did you get? I would like an easy no fuss easy to clean counter top version. Any recommendations?

we have this one and we LOVE it. we're actually on our 2nd one since we got married - we used the first so much that we ended up having to replace it! the bowl has to be hand washed, but the cover and stir bar can safely go in the dishwasher. even if you choose to wash everything by hand, there aren't any tiny crevices, so it's super easy to clean. the only thing i can think to possibly improve it would be if the bowl were bigger (it makes about 4 large servings). otherwise i'm 100% happy w/ it as is.

ReplyDeletejust wondering, since the above picture shows it in a pan, could you pour it in and freeze? I have an ice cream maker, but the canister has to be frozen 24 hours before use, and I'm not sure I can wait that long!! this looks delicious.
ReplyDeleteHi! my ice cream maker is the same, I have to wait 24 hours to use it. After that, I pour it in a container and freeze it until ready (I don't like to leave it in the ice cream canister) but you could.

ReplyDeleteI REALLY want to make this but do not own an iceream maker (nor have the funds to purchase one currently). Would it still work if I were to just freeze it?
ReplyDeleteHello, I am afraid you will need an ice cream maker for this one but, you can make granite, same recipe just pour it into a container, place it in the freeze and use a fork to scrape the surface when begin to set. Keep scraping every 30 minutes until it resembles "snow" I hope this helps!

DeleteEither that or you can take two bowls (once ceramic which gets put into the freezer for a couple hours and the other one is big enough that you can fit the first bowl in it and a layer of ice to keep the inner bowl frozen)and then you just put the sorbet mixture in the inner bowl and keep stirring till it sets up. Just store in the freezer afterwards. That is basically all a ice cream maker is... a cold bowl and a stirring paddle.

ReplyDeleteIf anyone is still looking for an ice cream maker: If you own a Kitchen Aid mixer, there is an ice cream bowl attachment. I love it and it's easy to clean. I also like that I only have to store the bowl (which I keep in the freezer) and a paddle, rather than a whole new appliance!

How many oranges would you guess one would need for a full cup of juice? And do we need the zest from just one orange, or multiples? Thanks!

DeleteKim, not sure where you live, but ice cream alternatives made with coconut milk, almond milk, etc are popping up all over the place. I never liked soy milk versions of ice cream, but the coconut and almond ones taste *just* like ice cream. Imagine how happy I was to have a "milkshake" again without the resulting digestive nightmare!
